massaged kale
prep time: 5 minutes
- 1 bunch of kale
- 1 lemon
- 1 clove of garlic minced
- 1 very generous pinch of sea salt
- 1 dressing of extra virgin olive oil
directions
- rip kale leaves into bite-sized pieces
- squeeze in lemon juice
- add garlic and salt
- pour in oil as if dressing a salad
- get your hands in there and massage the kale for 30-60 seconds (it breaks it down like ceviche)
this is a weekly staple in my home. fast, easy and it lasts for days. i always crave greens, so i’ve grown to love this cheap and easy dish.
i eat it with everything and it’s become a regular replacement for salad. enjoy!
