massaged kale

prep time: 5 minutes

  • 1 bunch of kale
  • 1 lemon
  • 1 clove of garlic minced
  • 1 very generous pinch of sea salt
  • 1 dressing of extra virgin olive oil

directions

  • rip kale leaves into bite-sized pieces
  • squeeze in lemon juice
  • add garlic and salt
  • pour in oil as if dressing a salad
  • get your hands in there and massage the kale for 30-60 seconds (it breaks it down like ceviche)

this is a weekly staple in my home.  fast, easy and it lasts for days. i always crave greens, so i’ve grown to love this cheap and easy dish.

i eat it with everything and it’s become a regular replacement for salad.  enjoy!
